Who loves a chicken Kiev?? I do! Made one of these years ago, then thought to myself how do I make a healthy chicken Kiev?
At the end of the day, healthy food NEEDS to taste GOOD! And look good!
It was my first attempt at making this and it came out better than I expected.
Here’s the recipe:-
4 chicken breasts
4 slices of sourdough bread
4 cloves of garlic
Handful of chopped parsley
How to make the garlic butter
Cut roughly 1/4 of an inch off the butter (The butter needs to be room temperature so you can mix with garlic and parsley)
Peel and crush the garlic.
Grab a handful of parsley and chopped very finely.
Mix all of the ingredients together (butter, garlic, parsley) then roll the garlic butter into four small balls ready to be placed inside the chicken.
You can roast the garlic to make it sweeter tasting. Peel the garlic, wrap in tin foil and roast for around 45 mins (the garlic should then be quite soft). Put the garlic, parsley and butter in to a food processor or blender.
Tip: if you are preparing the garlic butter to go into the chicken at a later time, you can cover the butter with tinfoil and place in the freezer for safekeeping. You can use this garlic butter for other dishes as well.
How to make the breadcrumbs
Toast four slices of sourdough bread in a toaster or under a grill.
Break up the toast and put in a blender and chop into breadcrumbs, be careful not to leave the blender on too long as you don’t want to chop the sourdough up too finely
Once you have chopped the sourdough, place on a baking tray and spread the breadcrumbs out. Put the oven on to about 250 C and place the breadcrumbs in the oven to crisp a little, you only need a few minutes – keep checking them as they can burn easily…(I found this out on my first attempt)
How to make the Kiev’s
Slice the chicken and make a pocket for the garlic butter
Place the garlic butter inside the pocket of the chicken
Get your eggs and whisk in a bowl and place your breadcrumbs into another bowl
Take your chicken and roll it in the egg, then roll the chicken in the breadcrumbs and place on a baking tray (you can repeat the process if you want your chicken to be coated more in breadcrumbs)
If your chicken isn’t completely covering the garlic butter you can now use tooth picks to pin the chicken together. (The chicken should seal fairly well if you have done it right without the use of the toothpicks)
Pre heat the oven to 180 C. Then place the Chicken Kievs in the oven for about 25 mins or until the chicken is cooked through.
Whats so great about this recipe is that the chicken is kept so moist because of the butter.
